It was the 4th of July this past week. That is the American Independence Day, celebrated with barbecues and fireworks all across the country. Being vegetarians, barbecue really doesn’t hold a lot of allure for us. Add to that 100+ (that’s Fahrenheit) temperatures and the prospect of being anywhere near an open fire was not very appealing. So instead, we had another classic American dish, pizza and followed it up with some Chocolate Chip cookies before going to watch fireworks.

While in grad school, one of my friends Jennifer had taught me a recipe that used Crisco (vegetable shortening) that was excellent and a recipe I had used for years. This time though, I decided to go the all natural route and use butter instead. I looked at Allrecipes.com and found this recipe (click here). 4000+ reviews with a 4.5 star rating, couldn’t be too shabby. And it wasn’t. They turned out to be some of the best cookies I have ever had. Two observations though – one, I am not sure what size cookies these people are making but I made half the recipe and it yielded me 18 good sized cookies (slightly more than 3 inches inĀ  diameter). Two, I found 10 minutes in the oven is not enough. You need more like 14-16 minutes.

Anyway, great recipe and one that I would heartily recommend.
