A couple of quick comments.
- I made the pesto recently with Parmigiano Reggiano. The taste was awesome!
- We used the pesto to make a sandwich similar to the caprese sandwich at Au Bon Pain. Very very nice and very easy to make.
- Take a baguette, slice it down the middle
- Smear pesto on both sides
- Put tomato slices
- Put thickly sliced mozzarella (a good quality cheese is a good idea)
- Place in your mouth and chew
