A Texas twist on Pesto – Pecan Pesto – addendum

A couple of quick comments.

  1. I made the pesto recently with Parmigiano Reggiano. The taste was awesome!
  2. We used the pesto to make a sandwich similar to the caprese sandwich at Au Bon Pain. Very very nice and very easy to make.
  • Take a baguette, slice it down the middle
  • Smear pesto on both sides
  • Put tomato slices
  • Put thickly sliced mozzarella (a good quality cheese is a good idea)
  • Place in your mouth and chew
